IRONSMITH: Mexico Chiapas Dragon Anaerobic Natural; bourbon and caturra varietals, anerobic fermentation–meaning the beans are kept in closed barrels for a short period of time and the natural sugars and yeasts surrounding the semi dry beans cause a degree of fermentation in an oxygen deprived environment.
